  • Total Time: 1 hour
  • Yield: 4 servings

Ingredients

For the Chicken

  • 1 1/2 lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning if plain)
  • 1/2 tsp cracked pepper
  • 1/2 – 3/4 tsp sea salt

For the Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quartered if small, cut into 6ths or 8ths if larger)
  • 1-2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • Salt and pepper to taste

For the Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Set your oven to 425°F (218°C) and prepare a sheet pan by lining it with parchment paper or spraying it with cooking oil for easy cleanup.
  2. Prepare and Roast Potatoes: In a medium bowl, toss the red potatoes with minced garlic, olive oil, Parmesan cheese, salt, and pepper until evenly coated. Spread the potatoes on one third of the sheet pan and roast in the oven for 10-15 minutes, depending on how browned and crispy you want them.
  3. Coat and Add Chicken: While the potatoes roast, in the same bowl, mix together the chicken breasts with olive oil, minced garlic, Parmesan, breadcrumbs, cracked pepper, and sea salt until well coated. Remove the sheet pan from the oven, add the chicken breasts to another third of the pan.
  4. Prepare Green Beans and Add to Pan: Toss the trimmed green beans with olive oil, minced garlic, Parmesan (if using), salt, and pepper. Add them to the remaining third of the sheet pan alongside the chicken and potatoes.
  5. Bake Until Cooked Through: Return the sheet pan to the oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). For extra crispy potatoes, switch the oven to broil on high and broil for 4-5 minutes more, watching carefully to avoid burning.
  6. Rest and Serve: Remove the sheet pan from the oven and let the chicken rest for several minutes before serving. Enjoy your balanced, flavorful Parmesan crusted chicken with roasted potatoes and green beans!

Notes

  • You can substitute Italian seasoning in the breadcrumbs to add extra flavor if you only have plain breadcrumbs.
  • Ensure the chicken pieces are roughly the same thickness for even cooking.
  • Adjust garlic amounts to your preference for milder or stronger flavor.
  • Use parchment paper or cooking spray to prevent sticking and make clean up easier.
  • If you prefer more crispy vegetables, broil at the end but watch closely to avoid burning.
