Ingredients
Carrots
- 2 pounds carrots, washed, scrubbed, diagonally cut into about 3-inch pieces
Butter Mixture
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon fresh ground black pepper
Toppings
- ⅓ cup grated parmesan cheese
- ¼ cup chopped fresh parsley
Instructions
- Preheat Oven: Preheat your oven to 425˚F to ensure it’s hot and ready for roasting the carrots.
- Prepare Baking Sheet: Grease a rimmed baking sheet with cooking spray or line it with foil to prevent sticking and make cleanup easier.
- Prep Carrots: Place the prepared carrot pieces in a large mixing bowl and set them aside.
- Make Butter Mixture: Melt the butter in the microwave. Once melted, add minced garlic, Italian seasoning, salt, and pepper to the butter, whisking until fully combined to evenly coat the carrots with flavor.
- Coat Carrots: Pour the butter and seasoning mixture over the carrots and toss to thoroughly coat. Add the grated parmesan cheese and mix again until evenly distributed.
- Arrange Carrots on Sheet: Transfer the coated carrots to the prepared baking sheet, spreading them out in a single layer for even roasting.
- Roast Carrots: Bake the carrots for 20 to 25 minutes, or until tender. Stir or mix the carrots halfway through to ensure they roast evenly on all sides.
- Season to Taste: Remove the baking sheet from the oven and taste the carrots. Adjust salt and pepper if necessary to your preference.
- Garnish and Serve: Sprinkle the roasted carrots with chopped fresh parsley and serve warm as a flavorful side dish.
Notes
- You can substitute butter with olive oil for a slightly lighter version.
- To add more depth of flavor, try adding a pinch of smoked paprika or chili flakes along with the Italian seasoning.
- For a dairy-free option, omit the parmesan cheese or use a vegan parmesan substitute.
- Make sure to toss the carrots halfway through roasting for even cooking and browning.
- These roasted carrots pair wonderfully with roasted chicken, grilled meats, or as part of a vegetarian meal.
