Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot and ready for baking the puff pastry.
- Caramelize the Onions: Heat the olive oil in a pan over medium heat. Add the thinly sliced sweet onions with a pinch of salt, tossing to coat. Cook, stirring occasionally, for about 15 to 20 minutes until the onions start to soften. Reduce the heat to low and continue cooking for another 45 to 60 minutes, stirring often, until the onions are golden and fully caramelized, developing rich sweetness.
- Cook the Potatoes: While the onions caramelize, place the peeled and chopped potatoes in a pot of cold water. Bring to a boil and cook for 10 to 15 minutes until the potatoes are fork-tender. Drain the water completely.
- Make the Cheesy Mashed Potatoes: With the pot still warm, add the heavy cream and butter to melt and heat through. Return the drained potatoes to the pot and mash them until smooth. Season with salt and pepper to taste, then stir in the grated cheddar cheese until melted and combined.
- Prepare the Puff Pastry Base: Lay the sheet of puff pastry onto a baking sheet lined with parchment paper. Use a fork to poke holes all over the pastry to prevent excessive rising. Spread the cheesy mashed potatoes thinly and evenly across the pastry, leaving a 1-inch border all around. Sprinkle the grated mozzarella cheese over the mashed potatoes. Brush the exposed pastry border with the egg wash to achieve a glossy, golden finish.
- Bake the Pizza: Place the prepared puff pastry in the preheated oven and bake for 15 to 20 minutes. Bake until the puff pastry is golden brown, puffed, and fully cooked.
- Finish and Serve: Remove the pizza from the oven and immediately top it with the caramelized onions. Garnish with chopped chives or your favorite fresh herbs for added color and flavor. Slice into servings and enjoy immediately while warm.
