This delicious Pizookie recipe combines the rich, gooey texture of a cookie with the warm, comforting presentation of a skillet dessert. Perfectly baked to have a slightly gooey center and topped with a mix of chocolate chips and Reese’s cups, this dessert is best enjoyed warm with a scoop of vanilla ice cream and optional hot fudge topping for an indulgent treat.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Wet Ingredients

  • 8 tablespoons (1/2 cup) unsalted butter (at room temperature)
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar (lightly packed)
  • 1 large egg (at room temperature)
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Mix-ins and Toppings

  • 10 to 12 Miniature Reese’s Cups (unwrapped and cut in half, optional)
  • 1 cup milk chocolate chips
  • 1/2 cup mini chocolate chips (or M&Ms)
  • Vanilla ice cream (optional topping)
  • Hot fudge topping (optional topping)

Instructions

  1. Prepare: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch cast-iron skillet or cake pan to prevent sticking.
  2. Cream Butter and Sugars: In a medium bowl, use a stand mixer or hand mixer to beat the unsalted butter, granulated sugar, and light brown sugar together for 2 to 3 minutes until the mixture is light and creamy. Then add the egg and vanilla extract, mixing until fully combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until a dough forms. Avoid over-mixing to keep the texture tender.
  4. Add Chocolate Chips: Fold in the milk chocolate chips and mini chocolate chips or M&Ms evenly into the dough.
  5. Divide Dough: Split the dough into two equal portions. Press half of the dough into the bottom of the prepared skillet in an even layer.
  6. Arrange Reese’s Cups: If using, place the halved Reese’s Cups cut-side down evenly over the dough layer in the skillet.
  7. Top with Remaining Dough: Press the remaining half of the dough over the Reese’s Cups, smoothing it evenly so the candies are fully covered.
  8. Bake: Place the skillet in the oven and bake for 20 to 25 minutes, until the edges are lightly golden and the center is still slightly soft and gooey. Avoid overbaking to maintain a tender center.
  9. Serve: Allow the pizookie to cool slightly. Serve warm topped with vanilla ice cream and hot fudge if desired for an extra indulgent treat.

Notes

  • Do not over-mix the dough after adding flour to prevent a tough texture.
  • The recipe works well with or without Reese’s Cups, but the candy adds extra gooey chocolate and peanut butter flavors.
  • Baking time can vary slightly depending on your oven, so start checking at 20 minutes.
  • For best results, use a cast-iron skillet as it evenly distributes heat and retains warmth.
  • Feel free to substitute mini chocolate chips with M&Ms or other favorite mix-ins.
