Pastry
- 2 sheets puff pastry, thawed
Filling
- 8 Tbsp tomato paste
- 2 Tbsp dried mixed Italian herbs
- Salt & pepper, to taste
- 2 cups shredded cheese, cheddar or pizza mix
Finishing
- 2 Tbsp whole milk
Instructions
- Preheat Oven & Prepare Tray: Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper and set aside to prepare for baking the pinwheels.
- Prepare Pastry: Place one sheet of thawed puff pastry on a large cutting board. Spread 4 tablespoons of tomato paste evenly over the pastry surface. Scatter 1 cup of shredded cheese evenly on top, then sprinkle with 1 tablespoon of dried Italian herbs. Season with salt and pepper to taste.
- Roll and Cut: Carefully roll the pastry from one edge to the other, forming a tight log. Using a sharp knife, slice the log into pinwheels about 1 inch (2 to 3 cm) thick. Arrange the pinwheels flat on the prepared baking sheet, spaced slightly apart.
- Brush with Milk: Lightly brush the tops of the pinwheels with 1 tablespoon of whole milk to help achieve a golden and glossy finish during baking.
- Repeat for Second Sheet: Repeat the spreading, filling, rolling, slicing, and brushing process with the second sheet of thawed puff pastry using the remaining ingredients.
- Bake: Place the baking sheet in the preheated oven and bake for 25 to 35 minutes or until the pinwheels are puffed up, golden brown, and crispy on the outside.
- Cool and Serve: Remove from the oven and allow the pinwheels to cool slightly on the tray. Serve warm immediately, or cool completely and store in an airtight container for later enjoyment.

- You can substitute the tomato paste with pizza sauce if preferred for a saucier filling.
