Instructions

  1. Thaw Puff Pastry: Remove the puff pastry sheets from the freezer and let them thaw on the kitchen counter for about an hour until pliable but still cool.
  2. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (204°C). Line a sheet pan with parchment paper to prevent sticking and for easy cleanup.
  3. Roll Out Dough: Lightly flour your work surface and roll out both puff pastry sheets to roughly the same size, slightly smaller than your baking sheet. Place one sheet on the prepared baking pan.
  4. Assemble the Pizza Bites: Spread the 1/4 cup vegan pesto evenly across the first sheet of dough, extending to the edges. Spoon dollops of marinara sauce over the pesto. Layer vegan pepperoni evenly, then add sliced roasted red peppers, crumbled vegan feta, and fresh basil leaves.
  5. Top with Second Sheet and Cut: Carefully place the second puff pastry sheet over the toppings and gently press down to secure—no need to seal the edges. Using a sharp knife, cut the assembled dough into 48 small squares.
  6. Brush Garlic Butter and Season: Combine melted vegan butter with garlic powder. Brush this mixture evenly over all the squares. Sprinkle everything seasoning on top to add extra flavor.
