For the Pecan Sauce
- 1 cup brown sugar, packed
 - 1 1/2 cups boiling water
 - 1/2 cup chopped pecans
 
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with non-stick spray or butter to prevent the cobbler from sticking.
 - Make Pumpkin Base: In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, whole milk, egg, vanilla extract, ground cinnamon, nutmeg, ginger, cloves, and salt until smooth and creamy. Pour this mixture evenly into the prepared baking dish to form the base layer.
 - Prepare Cobbler Topping: In a separate bowl, mix the all-purpose flour, granulated sugar, brown sugar, baking powder, and salt. Stir in the melted butter until a thick batter forms. Carefully spread this batter evenly over the pumpkin base layer.
 - Add Sugar and Boiling Water: Sprinkle the remaining brown sugar evenly over the topping batter. Then slowly pour the boiling water over the entire dish—do not stir at this point since the water will create the gooey sauce during baking.
 - Top with Pecans: Scatter the chopped pecans evenly over the top of the dish to add a crunchy texture and nutty flavor.
 - Bake the Cobbler: Place the baking dish in the oven and bake for 45 to 50 minutes, or until the topping is golden brown and bubbling sauce is visible underneath.
