Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a large rimmed baking tray with non-stick cooking spray to prevent sticking and set it aside for later.
- Prepare the Potatoes: Slice each of the washed and dried baby potatoes in half. Place them into a large mixing bowl, ready for seasoning.
- Season the Potatoes: Add the avocado oil, minced garlic, freshly chopped parsley, thyme, rosemary, salt, black pepper, garlic powder, and paprika to the bowl. Toss everything together thoroughly to ensure each potato half is coated evenly with the oil and seasonings.
- Arrange for Roasting: Transfer the seasoned potatoes to the prepared baking tray. Spread them out in a single, even layer to allow for uniform roasting and crisping.
- Roast the Potatoes: Place the baking tray in the preheated oven and roast for 45 to 55 minutes. Roast until the potato skins are golden brown and crisp, and the potato flesh is tender when pierced with a fork.
- Serve and Garnish: Once cooked, transfer the roasted potatoes to a serving platter. Garnish with grated Parmesan cheese and additional fresh herbs if desired. Serve warm and enjoy!
