Carrots
- 12 carrots, slice larger ones in half
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 1/2 tsp fresh thyme
Whipped Ricotta
- 2/3 cup ricotta cheese (or vegan ricotta alternative)
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1 tsp lemon juice
- Salt to taste
Garnish
- 1 1/2 tsp hot honey
- Chopped pistachios (optional, for garnish)
- Additional thyme (optional, for garnish)
Instructions
- Prepare Ingredients: Preheat your oven to 400ºF (200ºC). Trim the carrot greens and clean the carrots by scrubbing off any dirt with a paper towel or brush to ensure they are clean before roasting.
- Roast the Carrots: Place the carrots in a roasting pan. Drizzle with 1 tablespoon of olive oil, sprinkle with 1/2 teaspoon salt and 1 1/2 teaspoons of fresh thyme. Toss the carrots around to coat them evenly with the oil, salt, and thyme. Roast in the preheated oven for 20 to 30 minutes, or until the carrots are tender and slightly caramelized around the edges.
- Prepare the Whipped Ricotta: While the carrots roast, add 2/3 cup of ricotta cheese, 1 tablespoon olive oil, 1 teaspoon lemon zest, 1 teaspoon lemon juice, and salt to taste into a food processor. Pulse the mixture until smooth and creamy, scraping down the sides as needed. If the mixture is too thick, add more olive oil gradually until you reach a spreadable consistency. Set the whipped ricotta aside at room temperature.
- Plate the Dish: Spread the whipped ricotta evenly on serving plates. Arrange the roasted carrots on top of the ricotta. Drizzle 1 1/2 teaspoons of hot honey over the carrots and ricotta. Garnish with chopped pistachios and additional fresh thyme if desired for added texture and flavor.
