Ingredients
Roasted Carrots
- 12 carrots (slice larger ones in half)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 1/2 tsp fresh thyme
Whipped Ricotta
- 2/3 cup ricotta cheese or vegan cheese
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1 tsp lemon juice
- Salt to taste
To Garnish
- 1 1/2 tsp hot honey
- Chopped pistachios (quantity as desired)
- Additional fresh thyme for garnish
Instructions
- Prepare Ingredients: Preheat the oven to 400ºF (200ºC). Trim the greens from the carrots and clean them thoroughly by scrubbing off any dirt with a paper towel.
- Roast the Carrots: Place the carrots in a roasting pan. Drizzle with 1 tablespoon olive oil, sprinkle with 1/2 teaspoon salt and 1 1/2 teaspoons fresh thyme. Toss everything together so the carrots are evenly coated. Roast in the oven for 20 to 30 minutes until the carrots are crispy and cooked through.
- Prepare the Whipped Ricotta: In a food processor, combine 2/3 cup ricotta cheese (or vegan cheese if preferred), 1 tablespoon olive oil, 1 teaspoon lemon zest, 1 teaspoon lemon juice, and salt to taste. Pulse until the mixture is smooth and creamy. If the whipped ricotta is too thick, add additional extra virgin olive oil gradually until it reaches a spreadable consistency. Keep the whipped ricotta at room temperature while the carrots roast.
- Plate and Garnish: Spread a generous layer of the whipped ricotta on the serving plate. Arrange the roasted carrots on top of the ricotta. Drizzle with 1 1/2 teaspoons hot honey and garnish with chopped pistachios and additional fresh thyme for added flavor and texture.

- You can substitute ricotta cheese with a vegan cheese alternative for a dairy-free option.
