Ingredients

Roasted Garlic

  • 2 heads garlic
  • 2 teaspoons olive oil, divided
  • Kosher salt, to taste

Cheese Mixture

  • 10 oz. goat cheese, room temperature
  • 1/2 cup shredded Parmesan cheese
  • 3 tablespoons whole milk
  • 2 teaspoons fresh thyme leaves

Topping and Serving

  • 1/2 cup grape tomatoes
  • 2 teaspoons olive oil, divided
  • Salt and pepper, to taste
  • Sliced French bread or crostini, for dipping

Instructions

  1. Preheat and prepare garlic: Heat oven to 400 degrees Fahrenheit. Slice the top off each garlic head to expose the cloves. Drizzle 1 teaspoon olive oil over the cut surface and season with kosher salt and fresh cracked pepper.
  2. Roast garlic: Place the garlic heads cut side down on a baking sheet. Roast for 30 minutes or until cloves are soft and caramelized. Remove from oven and allow to cool until you can handle the garlic.
  3. Prepare cheese mixture: Turn oven temperature down to 350 degrees. In a medium bowl, combine goat cheese, shredded Parmesan, whole milk, and fresh thyme leaves. Squeeze the roasted garlic cloves from their skins into the bowl and stir until all ingredients are thoroughly mixed. Season with additional salt and pepper to taste.
  4. Prepare baking dish: Lightly oil a small baking dish with 1 teaspoon olive oil to prevent sticking. Spread the goat cheese mixture evenly in the dish.
  5. Add tomatoes and season: Arrange grape tomatoes on top of the goat cheese layer. Drizzle the remaining 1 teaspoon olive oil over the tomatoes and season with salt and pepper.
  6. Bake and broil: Bake the dip for 20 minutes until warmed through. Then broil for 1-2 minutes until the top is nicely browned and slightly bubbly. Watch carefully to prevent burning.
