Main Dish
- 1-2 cups broth or water for thinning the sauce (about 1 1/2 cups total)
- 1 pound ground chicken (or ground pork)
- 1/2 teaspoon salt
- freshly ground black pepper to taste
- 2 packets ramen or stir fry noodles (just the noodles)
- 1-2 cups fresh spinach
Toppings
- 1/4 cup fresh herbs (chives, scallions, cilantro, basil, or your choice)
- Salt to taste
- 1 tablespoon chili oil
- 1 tablespoon sesame seeds
Instructions
- Prepare the sauce: Whisk together soy sauce, gochujang, tomato paste, peanut butter, water, brown sugar, sesame oil, and minced garlic in a small bowl or shake in a jar until a thick sauce forms.
- Cook the chicken: Heat a large skillet over medium-high heat. Add the ground chicken and season generously with 1/2 teaspoon salt and freshly ground black pepper. Cook until browned and fully cooked through.
- Cook the noodles: Boil the ramen or stir fry noodles in boiling water for a few minutes until softened. Drain and set aside.
- Combine and heat: Add fresh spinach, cooked noodles, and the prepared sauce to the skillet with the chicken over medium-high heat. Toss everything together and cook until the spinach wilts and everything is heated through. Gradually add broth or water (about 1 to 1 1/2 cups) to thin the sauce to your desired sauciness, stirring as you go.
- Serve and garnish: Plate the noodles and top with fresh herbs, additional scallions if desired, a drizzle of chili oil, and a sprinkle of sesame seeds. Adjust salt to taste before serving.
