Ingredients
Mushrooms and Seasonings
- 1 pound brown mushrooms (or white, cremini, or portobello mushrooms), sliced into ½” thick slices
- 1 tablespoon soy sauce
- 1 sprig fresh thyme (or a pinch of dried thyme)
- 2 cloves garlic, minced
- Salt and pepper, to taste
Cooking Fats
- 2 tablespoons olive oil
- 2 tablespoons butter
Optional Garnish
- Chopped fresh chives
Instructions
- Prepare Mushrooms: Gently clean the mushrooms by wiping them with a paper towel or mushroom brush, then slice them into thick slices approximately ½ inch thick.
- Heat Fats: Add the butter and olive oil to a pan and heat over medium-high heat until melted and hot.
- Toss Mushrooms: Quickly toss the sliced mushrooms with soy sauce; do this just before cooking to avoid releasing excess moisture.
- Brown Mushrooms: Add the mushrooms to the heated pan, spreading them out. Allow them to cook undisturbed for about 4-5 minutes to develop a golden brown crust on one side.
- Add Garlic and Thyme: Stir in minced garlic and thyme, cooking an additional 3-4 minutes while stirring occasionally, until mushrooms are tender and cooked through.
- Season and Serve: Season with salt and pepper to taste. Garnish with chopped fresh chives if desired and serve immediately.

- Use a mix of mushroom varieties like cremini or portobello for a more complex flavor.
- Do not toss mushrooms with soy sauce too early to prevent sogginess.
- Cooking mushrooms without stirring at first allows for better browning and flavor development.
- Fresh thyme adds brightness but dried thyme can be used as a convenient alternative.
