Ingredients

Mushrooms and Seasonings

  • 1 tablespoon soy sauce
  • 1 sprig fresh thyme (or a pinch of dried thyme)
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Cooking Fats

  • 2 tablespoons olive oil
  • 2 tablespoons butter

Optional Garnish

  • Chopped fresh chives

Instructions

  1. Prepare Mushrooms: Gently clean the mushrooms by wiping them with a paper towel or mushroom brush, then slice them into thick slices approximately ½ inch thick.
  2. Heat Fats: Add the butter and olive oil to a pan and heat over medium-high heat until melted and hot.
  3. Toss Mushrooms: Quickly toss the sliced mushrooms with soy sauce; do this just before cooking to avoid releasing excess moisture.
  4. Brown Mushrooms: Add the mushrooms to the heated pan, spreading them out. Allow them to cook undisturbed for about 4-5 minutes to develop a golden brown crust on one side.
  5. Add Garlic and Thyme: Stir in minced garlic and thyme, cooking an additional 3-4 minutes while stirring occasionally, until mushrooms are tender and cooked through.
