  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Marinade

  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp lime juice (from 1/2 lime)
  • 1 Tbsp Cajun spice
  • 1/2 tsp salt

Main Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 bell peppers (any color), sliced
  • 1/2 medium onion, sliced
  • 1/4 cup cilantro, chopped

Additional Ingredients

  • 2-3 tsp lime juice (from 1/2 lime)
  • 8 small flour tortillas
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Jalapeno Ranch (for serving)

Instructions

  1. Prepare Marinade: In a small bowl, combine the olive oil, minced garlic, 1 tablespoon lime juice, Cajun spice, and salt to create a flavorful marinade.
  2. Marinate Vegetables: Slice the bell peppers and onion into 1/3 inch strips and place them in a medium bowl. Pour half of the marinade over the vegetables and toss to coat evenly.
  3. Marinate Shrimp: In a separate medium bowl, pat the shrimp dry with paper towels, then add the remaining marinade. Stir well to ensure the shrimp are fully coated.
  4. Cook Shrimp: Heat a large heavy pan over medium heat and add 1/2 tablespoon olive oil. Once hot, add the shrimp in a single layer. Sauté each side for 1-2 minutes or until shrimp are opaque and cooked through. Remove shrimp from pan and set aside promptly to avoid overcooking.
  5. Sauté Vegetables: In the same pan, add the marinated vegetables. Cook over medium heat, stirring occasionally, for about 10 minutes or until vegetables are tender and golden brown on the edges. Then turn off the heat.
  6. Combine and Finish: Return the cooked shrimp to the pan with the vegetables. Add the chopped cilantro and squeeze 2-3 teaspoons of fresh lime juice over the mixture. Toss everything gently to combine.
  7. Serve: Warm or toast the flour tortillas. Plate the shrimp and vegetable mixture on the tortillas and serve with sliced avocado, jalapeno ranch, and lime wedges on the side for an extra burst of flavor.

Notes

  • Pat shrimp dry before marinating to ensure the marinade sticks well and to avoid excess moisture during cooking.
  • If you prefer a gluten-free option, substitute flour tortillas with corn tortillas.
  • Adjust the amount of Cajun spice based on your preferred heat level.
  • Jalapeno Ranch can be replaced with sour cream or any preferred dipping sauce.
  • For added crunch, serve with sliced radishes or shredded lettuce.
