Ingredients
Zucchini and Vegetable Mixture:
- 2 large zucchini, cut into cubes
- 1 green bell pepper, chopped
- 1 onion, diced
- 1 cup grape tomatoes, sliced in half
- 1/2 cup mozzarella cheese, grated

Toppings and Garnish:
- 1/2 cup mozzarella cheese, grated

- 1/2 tsp red chili flakes, for garnish
Instructions
- Preheat the Oven: Set your oven to 375ºF (190ºC) to ensure it reaches the proper temperature before you begin baking the vegetables and cheese.
- Combine and Season the Vegetables: In a baking dish, add zucchini, bell pepper, onion, tomatoes, half of the mozzarella cheese, Italian herb blend, garlic powder, salt, pepper, and olive oil. Mix well.
- Bake the Vegetable Mixture: Bake the seasoned vegetable and cheese mixture for about 20 minutes until zucchini is tender.
- Top with Remaining Cheese and Finish Baking: Sprinkle the rest of the mozzarella cheese over the vegetables and bake for another 10 minutes until cheese is melted and golden.
- Garnish and Serve: Top with parsley and red chili flakes. Serve hot.
