Ingredients

  • 2 lbs. baby potatoes, red and gold
  • 1/2 head cabbage, chopped

Instructions

  1. Prepare the Corned Beef: Remove the corned beef from its packaging and place it in the bottom of your 8-quart slow cooker. Sprinkle any included seasoning packet over the top. Pour in the beef broth (or water) until the beef is just covered and add the bay leaves.
  2. Start Cooking: Cover the slow cooker with its lid and cook the corned beef on LOW heat for 5 hours. This slow simmer allows the beef to become tender and flavorful.
  3. Add Potatoes and Carrots: Carefully add the baby potatoes and carrots around the brisket in the slow cooker. Replace the lid and continue cooking on LOW heat for 3 more hours, until the vegetables are just fork-tender.
  4. Add Cabbage: Layer the chopped cabbage on top of the meat and vegetables. Cover again and cook for an additional 30 minutes on LOW, until the cabbage is wilted but not mushy.
  5. Serve: Using tongs and a slotted spoon, remove the cabbage, carrots, and potatoes to a serving platter. Take the corned beef out, let it rest for 5 minutes, then slice against the grain. Serve with the vegetables and enjoy your meal!
