Ingredients

Crust

Filling

  • 2 packages (8 ounces each) cream cheese, room temperature
  • 2 large eggs, room temperature
  • ⅓ cup (67 g) granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 2 cups (332 g) freshly diced strawberries

Crumble Topping

  • ¾ cup (94 g) all-purpose flour
  • ¼ cup (50 g) light brown sugar, packed
  • ¼ teaspoon kosher salt
  • 5 tablespoons unsalted butter, melted

Instructions

  1. Prep the Pan – Preheat your oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper, making sure the paper comes up the sides to help lift out the bars later.
  2. Make the Crust – In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand. Press firmly and evenly into the bottom of your prepared pan to form the crust.
  3. Prepare the Filling – In a large mixing bowl, use a hand mixer to beat the cream cheese, eggs, sugar, vanilla extract, and kosher salt together until the mixture is smooth and creamy. Spread the filling evenly over the crust in the pan.
  4. Add Strawberries – Scatter the freshly diced strawberries evenly over the cheesecake filling.
  5. Make the Crumble Topping – In a medium bowl, whisk together the flour, light brown sugar, and salt. Pour in the melted butter and stir until the mixture forms a crumbly dough.
  6. Add the Topping – Sprinkle the crumble mixture evenly over the strawberries.
  7. Bake – Bake the bars in the preheated oven for 35–40 minutes, or until the filling is set and the top is starting to turn golden brown.
  8. Cool and Chill – Remove from the oven and transfer the pan to a wire rack to cool completely, about 1 hour. Then, move the cooled bars to the refrigerator and chill for at least another hour to set before slicing and serving.
