Delight in these luscious Strawberry Lava Cakes, featuring a smooth white chocolate and strawberry curd-filled center with a subtle lemon zest hint. Perfect for a special dessert, these individual cakes bake quickly and emerge with a molten middle that bursts with fruity flavor.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

Cake Batter

  • 2/3 cup white chocolate
  • 1/2 cup unsalted butter, chopped
  • 2/3 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup strawberry curd
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 3 vanilla beans, seeds only or 1 teaspoon vanilla extract
  • 4 large eggs, room temperature
  • 4 large egg yolks, room temperature
  • 4-5 drops pink gel food color (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it reaches the correct temperature for baking the lava cakes.
  2. Prepare the ramekins: Butter six 6-ounce ramekins thoroughly and set them on a baking sheet to prevent spills and make handling easier.
  3. Melt the chocolate and butter: Combine the white chocolate and chopped butter in a large microwave-safe bowl. Microwave for 1 minute, then stir. Continue microwaving in 15-second intervals, stirring well after each, until the mixture is completely melted and smooth.
  4. Make the batter: Whisk the melted chocolate mixture together first with the flour and powdered sugar. Then add in the strawberry curd, lemon juice, lemon zest, optional pink gel food color, and vanilla bean seeds or vanilla extract. Mix thoroughly to combine all ingredients evenly.
  5. Add the eggs: Whisk in the 4 large eggs and 4 large egg yolks slowly until the batter is smooth, glossy, and fully incorporated.
  6. Bake: Pour the batter evenly into the prepared ramekins. Bake in the preheated oven for 14-15 minutes, or until the edges are set but the centers remain soft and gooey.
  7. Rest the cakes: Remove the cakes from the oven and let them stand for 5 minutes to firm up slightly for easier removal.
  8. Remove from ramekins: Run a butter knife around the edges of each cake to loosen it. Carefully invert each ramekin onto a serving plate to release the lava cake.
  9. Serve: Dust with powdered sugar or add extra strawberry curd on top as desired. Serve immediately for the best molten texture.

Notes

  • Ensure eggs are at room temperature to achieve the smoothest batter and best rise.
  • Use high-quality white chocolate for a richer flavor.
  • Butter the ramekins well to avoid sticking.
  • Do not overbake; the center should remain molten for the lava effect.
  • Optional pink gel food color adds a lovely hue but can be omitted without affecting flavor.
