Ingredients
Cheese Mixture
- 8 oz goat cheese, softened
- 3 oz cream cheese, softened
- 1 TBSP honey (plus extra for drizzling)
Fruit Topping
- ½ pound fresh strawberries, hulled and chopped
- 1 large ripe peach, pitted and diced
- 1-2 TBSP fresh chopped or sliced basil
- ½ cup orange juice
- 1 TBSP granulated sugar
- 2 tsp white wine vinegar
- ⅛ tsp fine sea salt
Flatbread
- 2 naan flatbreads
- Olive oil for brushing
- Optional: cinnamon sugar for sprinkling
Instructions
- Soften Cheeses: Allow the goat cheese and cream cheese to soften slightly to room temperature for easier blending.
- Prepare Fruit Glaze: In a small saucepan, combine orange juice, sugar, white wine vinegar, and sea salt. Bring to a boil.
- Reduce Glaze: Cook the mixture for about 15 minutes, stirring occasionally, until it thickens into a glaze. Remove from heat and let it cool.
- Prepare Fruit Salsa: While glaze cools, hull and chop strawberries, pit and dice the peach. Combine the fruit with fresh basil in a bowl. Once the glaze has cooled slightly, pour it over the fruit and toss gently to coat.
- Whip Goat Cheese: Using a food processor, blend goat cheese, cream cheese, and 1 tablespoon honey until creamy and smooth. Scrape down sides as needed during blending.
- Preheat Oven & Prepare Flatbreads: Preheat oven to 400°F (204°C). Place naan flatbreads on a baking sheet and lightly brush with olive oil. Optionally, sprinkle with cinnamon sugar for added flavor.
- Bake Flatbreads: Bake naan for 6-8 minutes until the edges turn golden and crispy. Remove from oven and allow to cool slightly.
- Assemble Flatbreads: Spread a generous layer of whipped goat cheese over each flatbread. Top with the strawberry peach salsa.
- Final Touch: Drizzle a little extra honey over the flatbreads if desired. Slice and serve immediately while warm and fresh.
- Advance Preparation: Both the whipped goat cheese and the fruit topping can be prepared a day ahead, stored in airtight containers in the refrigerator. Bring them back to room temperature before assembling and serving on toasted flatbreads.
