Crust
- 16 ounces sugar cookie dough (softened, storebought dough)
Cream Cheese Frosting
- 8 ounces cream cheese (softened, one block)
- ½ cup butter (softened, salted)
- 2 cups powdered sugar (confectioner’s sugar)
- 1 teaspoon vanilla extract
Strawberry Layer
- 1 pound fresh strawberries (divided)
- 1 cup water
- ½ cup granulated sugar
- 3 ounces strawberry gelatin powder (such as JELL-O)
- ¼ cup cornstarch
Instructions
- Making The Sugar Cookie Crust: Preheat oven to 350°F (175°C). Line a 10 x 15 inch baking sheet with parchment paper or lightly grease it. Rub a teaspoon of oil onto your hands and spread the softened sugar cookie dough evenly on the greased pan, working it until fully spread. Bake for 17-18 minutes or until the edges turn a light golden brown. Let cool on the pan for about 15 minutes.
- Preparing The Cream Cheese Frosting: In a mixing bowl, cream together softened cream cheese and butter using an electric mixer until smooth. Add 1 cup powdered sugar and vanilla extract, then mix until smooth. Add the remaining powdered sugar and blend again until fully smooth and creamy.
- Applying The Frosting: Once the cookie crust is cooled but still on the pan, evenly spread the cream cheese frosting over the entire surface.
- Preparing The Strawberry Layer: Dice about four medium strawberries (approximately ½ cup) and mash them gently in a large bowl, removing stems. Slice the remaining strawberries lengthwise into ¼ inch thick slices, removing stems. Set both aside separately.
- Making The Strawberry Glaze: In a medium saucepan over medium heat, combine strawberry gelatin powder, water, granulated sugar, cornstarch, and the mashed strawberries. Stir continuously and cook for about 5 minutes until the mixture thickens into a glaze. Remove from heat and cool for 15 minutes until warm but not hot.
- Assembling The Strawberry Pizza: Gently spread a thin layer of the warm strawberry glaze over the cream cheese frosting. Lay the sliced strawberries on top in rows, adding them gradually while spooning remaining glaze over the fruit for a glossy finish.
- Chilling: Place the pan in the refrigerator for 20 minutes or until the glaze fully sets and the pizza is chilled. Slice into 16 servings and serve.
