Ingredients
For the Strawberry Sorbet
- 4 cups strawberries (fresh or frozen, hulled and halved)
- 2–3 tablespoons lemon juice or zest (to taste)
- 1/3 cup sweetener of choice (sugar, coconut sugar, maple syrup, honey, agave, or xylitol for keto)
- Pinch of salt (optional)
Optional Add-ins
- 1/2 cup coconut milk (for creamier texture)
- 1 ripe banana, peeled (for strawberry banana sorbet)
- Zest of orange or lime (in place of lemon zest, for variation)
- Other berries or fruits (to replace some or all strawberries, e.g., raspberries, cherries, blueberries, mango, or pineapple)

Instructions
- Prepare the Strawberries. Wash the strawberries thoroughly in a strainer. Remove and discard the stems. If you’re using fresh strawberries, hull and halve them, then freeze until firm. Alternatively, use pre-frozen strawberries for convenience.
- Blend the Ingredients. In a high-speed blender or food processor, add the frozen strawberries, lemon juice or zest, sweetener, and a pinch of salt (if using). Blend until the mixture is thick, smooth, and resembles gelato. If you’re using optional add-ins (like coconut milk or banana), add them now and blend until combined.
- Adjust Consistency (if needed). If the mixture is too thick for your blender, allow it to thaw slightly, or add a splash of coconut milk or water to loosen. Blend again until creamy.
- Serve Immediately or Churn (Optional). For soft-serve-style sorbet, serve directly from the blender using an ice cream scoop. For a firmer, frostier texture, transfer the mixture to an ice cream machine and churn according to the manufacturer’s instructions until smooth and scoopable.
- Garnish and Enjoy. Scoop the sorbet into chilled glasses or bowls. Top with your favorite garnishes, such as fresh berries, whipped coconut cream, syrup, or chocolate chips. Enjoy immediately for the best texture.
Notes
- Sorbet is best enjoyed the day it’s made, as it contains no gums or preservatives.
- Store any leftovers in an airtight container in the freezer for up to 3 months. Thaw lightly before serving to soften.
- Experiment with different fruits or mix-ins for custom flavors.
- For a keto version, use sugar-free sweetener such as xylitol.
