- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 6 cloves garlic, minced
- 1 tablespoon Italian seasoning

- 1/2 teaspoon paprika
- 1 (15 ounce) can fire-roasted diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1 (14.5 ounce) can beef broth
- 2 teaspoons Worcestershire sauce
- 1 cup uncooked long-grain white rice
- 8 ounces shredded Colby Jack cheese
- Kosher salt to taste
- Fresh cracked pepper to taste
- Fresh chopped parsley for garnish
Instructions
- Brown the Ground Beef: Heat a large sauté pan over medium-high heat, add the ground beef, and cook it while crumbling until it’s browned and fully cooked. Transfer the cooked beef to a plate and set aside.
- Sauté the Vegetables: Add olive oil to the pan and reduce heat to medium. Add the diced onion, red bell pepper, green bell pepper, and season with a few pinches of salt and pepper. Cook, stirring occasionally, for about 4 minutes until the vegetables start to soften.
- Add Aromatics and Spices: Stir in the minced garlic, Italian seasoning, cumin, paprika, and add a couple more pinches of salt and pepper. Cook briefly until fragrant.
- Add Liquids and Rice: Pour in the fire-roasted diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and add the uncooked long-grain white rice. Season with additional salt and pepper to taste and stir to combine.
- Simmer the Mixture: Bring the mixture to a simmer, then reduce the heat to low, cover the pan, and cook for about 18-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Add Cheese and Broil: Once the rice is cooked, sprinkle the shredded Colby Jack cheese evenly over the mixture. Place the pan under a broiler for 2-3 minutes or until the cheese has melted and is bubbly.
- Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve immediately for a warm and comforting meal.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- If you prefer a spicier dish, add some crushed red pepper flakes when adding the spices.
- For a vegetarian version, omit the beef and use vegetable broth instead of beef broth.
- The broiling step is important to get a nicely melted and slightly browned cheese topping.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
