  • 1 cup uncooked long-grain white rice
  • 8 ounces shredded Colby Jack cheese
  • Kosher salt to taste
  • Fresh cracked pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Brown the Ground Beef: Heat a large sauté pan over medium-high heat, add the ground beef, and cook it while crumbling until it’s browned and fully cooked. Transfer the cooked beef to a plate and set aside.
  2. Sauté the Vegetables: Add olive oil to the pan and reduce heat to medium. Add the diced onion, red bell pepper, green bell pepper, and season with a few pinches of salt and pepper. Cook, stirring occasionally, for about 4 minutes until the vegetables start to soften.
  3. Add Aromatics and Spices: Stir in the minced garlic, Italian seasoning, cumin, paprika, and add a couple more pinches of salt and pepper. Cook briefly until fragrant.
  4. Add Liquids and Rice: Pour in the fire-roasted diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and add the uncooked long-grain white rice. Season with additional salt and pepper to taste and stir to combine.
  5. Simmer the Mixture: Bring the mixture to a simmer, then reduce the heat to low, cover the pan, and cook for about 18-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  6. Add Cheese and Broil: Once the rice is cooked, sprinkle the shredded Colby Jack cheese evenly over the mixture. Place the pan under a broiler for 2-3 minutes or until the cheese has melted and is bubbly.
  7. Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve immediately for a warm and comforting meal.
