Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (180°C) and line a small baking dish or sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the Baguette: Slice the baguette into 1/2-inch thick pieces. Brush each slice with 1 tablespoon of olive oil and sprinkle with salt to enhance flavor and help the bread toast evenly.
  3. Toast the Bread: Bake the bread slices in the preheated oven for 2 to 3 minutes. Then turn each piece over and bake for an additional 2 to 3 minutes until golden and crisp. Remove from oven and set aside.
  4. Make the Pistachio Mixture: Chop the pistachios finely into crumbs. In a bowl, combine the chopped pistachios with honey, red pepper flakes, and thyme, mixing well to infuse flavors.
  5. Prepare the Brie: Place the rounds of brie cheese on the prepared baking sheet. Make small cuts or slits on the top surface of each brie round to allow the topping flavors to meld and the cheese to heat evenly.
  6. Top the Brie: Spread the prepared pistachio and honey mixture evenly over the tops of the brie rounds.
  7. Add Olive Oil and Honey: Drizzle 1 tablespoon of olive oil over the pistachio-topped brie. Optionally, add extra honey drizzle for sweetness if desired.
