Ingredients
Main Ingredients
- 1 pound chicken breast (cut into bite-sized pieces)
- 2 tablespoons olive oil
- Salt and pepper to taste
For the Marinade/Sauce
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
Vegetables & Aromatics
- 1 tablespoon minced garlic
- 1 teaspoon ginger (minced)
- 1 bell pepper (sliced)
- 1 cup broccoli florets
For Garnish
- Sesame seeds (for garnish)
- Green onions (sliced, for garnish)
Instructions
- Marinate Chicken: In a medium bowl, mix the sweet chili sauce, soy sauce, and cornstarch until well combined. Add the chicken pieces, toss to thoroughly coat, and let the chicken marinate for 15 minutes to absorb the flavors and tenderize the meat.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer and cook for 7-10 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the minced garlic and ginger, followed by the sliced bell pepper and broccoli florets. Sauté the vegetables for 5-7 minutes, stirring frequently, until they are just tender but still crisp.
- Combine: Return the cooked chicken to the skillet with the vegetables. Pour any remaining marinade over the mixture. Cook everything together for an additional 2-3 minutes, stirring, until everything is heated through and coated in the sauce.
- Serve: Transfer the Sweet Chili Chicken to a serving dish and garnish with sesame seeds and sliced green onions. Serve immediately, ideally over cooked rice or noodles for a complete meal.
Notes
- You can adjust the sweetness or spiciness of the sauce by increasing or reducing the amount of sweet chili sauce.
- This dish pairs well with steamed jasmine rice, brown rice, or noodles.
- For a vegetarian version, substitute chicken with tofu or tempeh.
- Use a variety of vegetables such as snap peas or carrots for added color and nutrients.
