This Hibiscus Tea Strawberry-Lemonade Refresher is a vibrant, hydrating drink that perfectly balances tart hibiscus tea with fresh strawberries and lemon juice, lightly sweetened with maple syrup. Refreshing, naturally colored, and full of antioxidants, it’s an ideal summer beverage that’s easy to make and customizable to your liking.

  • Total Time: 10 minutes
  • Yield: 2 servings

Ingredients

Main Ingredients

  • 2 cups water
  • 2 hibiscus tea bags or 2 tablespoons dried hibiscus flowers
  • 1/2 cup strawberries
  • 1/4 cup lemon juice (freshly squeezed)
  • 23 tablespoons maple syrup (adjust to taste)

Optional Toppings

  • Extra sliced strawberries
  • Lemon slices
  • Fresh mint leaves

Instructions

  1. Prepare the Hibiscus Tea: In a tea kettle, bring 2 cups of water to a boil. Once boiling, remove from heat and add either the hibiscus tea bags or dried hibiscus flowers. Steep for 5-7 minutes; the longer it steeps, the stronger the flavor. Remove the tea bags or strain out the flowers and allow the tea to cool completely.
  2. Make the Strawberry Purée: Wash and slice the strawberries. Place them into a blender along with 1/4 cup of the cooled hibiscus tea. Blend until completely smooth. For a smoother drink, optionally strain the puree through a fine mesh sieve or nut milk bag.
  3. Combine & Flavor: In a large pitcher, mix together the remaining cooled hibiscus tea, strawberry puree, lemon juice, and maple syrup. Stir well to combine. Taste and adjust the sweetness by adding more maple syrup, or increase tartness with extra lemon juice if desired.
  4. Serve: Pour the refresher over ice into glasses. Garnish each glass with lemon slices, additional fresh strawberries, and a sprig of mint. Enjoy immediately for the best flavor!

Notes

  • You can brew the hibiscus tea 2-3 days in advance and store it in the refrigerator for quick assembly.
  • If you use pre-chilled hibiscus tea, the recipe takes only 10 minutes to prepare.
  • Swap maple syrup for agave or honey if you prefer (note this will alter the recipe’s vegan status).
  • Add sparkling water for a fizzy twist.
  • Adjust the sweetener and lemon juice to match your personal taste for sweetness or tartness.
