- 4 lbs sweet potatoes
- 1/2 cup (110g) packed light-brown sugar
- 1/2 cup (113g) unsalted butter, melted

- 1/2 cup (70g) all-purpose flour (scoop and level to measure)
- 1/2 cup (110g) packed light brown sugar
- 1/2 tsp ground cinnamon
- 1 cup chopped or broken pecans
- 1/4 cup (57g) unsalted butter, melted
Instructions
- Preheat and Bake Sweet Potatoes: Preheat oven to 400°F (204°C). Pierce each sweet potato twice on two sides and place on a rimmed baking sheet lined with foil. Bake for 60 to 75 minutes until soft and cooked through. Reduce oven temperature to 350°F (177°C).
- Peel and Mash Potatoes: Allow the sweet potatoes to cool slightly so they are easy to handle. Peel off the skins, which should come off easily, and transfer the potatoes to a large mixing bowl. Mash thoroughly with a potato masher or pass through a potato ricer until smooth.
- Mix Sweet Potato Filling: Let the mashed sweet potatoes cool for 5 to 10 minutes. Add brown sugar, melted butter, milk, eggs, vanilla extract, salt (about 1/2 tsp or to taste), and freshly ground black pepper (about 1/4 tsp). Using an electric hand mixer, blend until the mixture is smooth and well combined.
- Prepare Casserole: Grease a 12×8 inch casserole dish and pour the sweet potato mixture into it. Spread it into an even layer.
- Make Topping: In a medium bowl, combine flour, brown sugar, ground cinnamon, and pecans. Break up any clumps of brown sugar with your fingertips. Pour the melted butter over the mixture and stir until evenly moistened, tossing frequently as the mixture may seem dry at first.
- Assemble and Bake: Sprinkle the pecan topping evenly over the sweet potato layer in the casserole dish. Bake in the preheated 350°F oven for about 40 minutes until heated through. Tent with foil during the last 10 minutes if the topping begins to brown too much.
- Serve: Remove from oven and allow to cool for about 5 minutes. Serve warm as a comforting side dish.
