Peach Mixture
- 2 (29 oz) cans peaches in heavy syrup (Use the peach juice from only one can)
- 5 tbsp melted unsalted butter
- 1/4 cup granulated sugar (adjust to taste)
- 2 1/2 tsp lemon juice
- 2 tsp vanilla extract
- 1/8 tsp salt
Topping
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 pinch nutmeg
- 1/2 tsp salt
- 1 cup melted unsalted butter (for drizzling)
Instructions
- Preheat Oven and Prepare Peaches: Preheat the oven to 400°F (200°C). Pour the first can of peaches along with its juice into a 9×13-inch baking dish. Drain the juice from the second can and add only the peaches to the dish. Do not use the juice from the second can.
- Mix Peach Ingredients: Add the melted butter, 1/8 teaspoon salt, lemon juice, 1/4 cup granulated sugar, and vanilla extract to the peaches and syrup in the pan. Stir well to combine evenly.
- Prepare Topping Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, cinnamon, nutmeg, and 1/2 teaspoon salt. Mix thoroughly to distribute the spices and baking powder evenly.
- Assemble Topping: Pour the flour mixture evenly over the peach mixture in the pan. Use a clean hand or the back of a large spoon to smooth out the topping, covering as much of the peaches as possible and creating a mostly smooth surface, though some edges may remain uncovered.
- Drizzle Butter and Bake: Starting from the top edge and working downward, drizzle the remaining melted butter evenly over the flour topping. Place the cobbler in the oven and bake for 15 minutes at 400°F (200°C). Then reduce the oven temperature to 375°F (190°C) and continue baking for approximately 1 hour, or until the topping is crisp and golden brown.
- Serve: Remove from the oven and serve warm, ideally with a scoop or two of ice cream for a delightful finishing touch.
Notes
- Using the peach juice from only one can ensures the cobbler doesn’t become too runny, resulting in a perfect texture.
- When smoothing the topping, it’s okay if some edges are not covered completely; the mixture will spread slightly during baking.
- For fresh peaches, peel and slice about 6-8 ripe peaches and replace the canned peaches and syrup with fresh peach slices combined with lemon juice and sugar to taste. You may need to increase baking time slightly to ensure the topping crisps properly over the juicier fresh fruit.
- Adjust sugar amount to your preference depending on the sweetness of your peaches or syrup used.
- Serve warm with vanilla ice cream or whipped cream for best results.
