Ingredients
Chicken
- 2 small chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon poultry seasoning (or salt, pepper, garlic powder mix)
Bread and Garlic Butter
- 1 Italian style loaf
- 1 stick unsalted butter, melted
- 1 tablespoon minced garlic (or garlic paste)
- 1 tablespoon chopped parsley
- 1 teaspoon crushed red pepper flakes
Alfredo Sauce
- 1/2 stick unsalted butter
- 1 tablespoon minced garlic
- 1/2 cup heavy cream
- 1/4 cup shredded parmesan cheese
- 1 tablespoon chopped parsley
- Salt and pepper, to taste
Topping
- 1/2 cup shredded mozzarella cheese
Instructions
- Prepare the chicken: Cut the chicken breasts into ½ inch pieces. Place them in a bowl, drizzle with 1 tablespoon olive oil, and season with 1 tablespoon poultry seasoning or a mix of salt, pepper, and garlic powder. In a pan over medium heat, cook the chicken pieces until golden and cooked through, about 6-8 minutes.
- Prepare the bread and garlic butter: Slice the Italian loaf lengthwise in half. In a small bowl, combine 1 stick of melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Spread this mixture evenly on both halves of the bread.
- Toast the bread: Place the prepared bread halves on a baking sheet and toast in a preheated 350°F (175°C) oven for 5-10 minutes. Check after 5 minutes and continue toasting until the bread reaches your desired level of crispness.
- Make the Alfredo sauce: Using the same pan used for the chicken, heat it over medium-low heat. Add 1/2 stick of butter and let it melt. Stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant. Lower the heat to low, then add 1/2 cup heavy cream, 1/4 cup shredded parmesan cheese, and 1 tablespoon chopped parsley. Simmer the sauce on low, stirring continuously for about 3-5 minutes, until slightly thickened. Remove from heat.
- Assemble the garlic bread: Spread half of the Alfredo sauce over the toasted bread halves. Top with the cooked chicken pieces, shredded mozzarella cheese, then drizzle with the remaining Alfredo sauce.
- Bake to melt cheese: Return the assembled bread to the oven at 350°F (175°C) and bake for another 5 minutes or until the mozzarella is fully melted and bubbly.
