This creamy Vegan Caesar Dressing with Cashews & Capers is a flavorful plant-based alternative to traditional Caesar dressing. Made with soaked cashews, miso paste, capers and their brine, nutritional yeast, and fresh lemon juice, it offers a tangy, salty, umami-rich taste that closely mimics the classic Caesar. Ready in just 15 minutes using a blender, this dairy-free, egg-free dressing is perfect for salads, sandwiches, or as a dip.

  • Total Time: 15 minutes
  • Yield: 2 cups

Ingredients

Vegan Caesar Dressing Ingredients

  • 1 cup raw cashews, soaked and drained
  • 1/4 cup olive oil
  • 1/4 cup lemon juice (about 1 lemon)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon miso paste
  • 4 cloves garlic
  • 5 teaspoons capers with brine
  • 1/4 cup nutritional yeast
  • 2 teaspoons maple syrup
  • 4-6 tablespoons water
  • Salt and pepper, to taste

Instructions

  1. Soak Cashews: Place raw cashews in a jar or bowl, cover with water, and soak for at least 4 hours or overnight in the refrigerator to soften them for blending.
  2. Drain and Rinse: After soaking, drain the cashews using a sieve and rinse them under cold water to remove any residue.
  3. Blend Ingredients: Add the drained cashews, olive oil, lemon juice, Dijon mustard, miso paste, garlic cloves, capers with brine, nutritional yeast, and maple syrup into a high-speed blender.
  4. Puree Until Smooth: Blend on high speed until the mixture becomes creamy and smooth, scraping down the sides as needed to incorporate all ingredients evenly.
  5. Adjust Consistency and Flavor: If you prefer a thinner dressing, gradually add 1-2 tablespoons of water while blending until achieving your desired consistency. For more acidity or tanginess, add extra capers, caper brine, or lemon juice to taste.
  6. Season to Taste: Taste the dressing and add salt and freshly ground black pepper as needed to balance the flavors.
  7. Serve or Store: Use immediately on your favorite salads, or transfer to an airtight container and refrigerate for up to a week.

Notes

  • Soaking cashews overnight is essential to get a smooth, creamy texture—do not skip this step.
  • You can adjust the amount of capers or lemon juice to suit your taste preferences for saltiness and acidity.
  • This dressing keeps well in the fridge for up to 7 days; always give it a good stir before serving.
  • If you don’t have a high-speed blender, blend in batches or use a food processor, but texture might be slightly less silky.
  • For a garlic milder flavor, reduce cloves to 2 or roast them before blending.
