These Vegan Spinach Pinwheels are a perfect appetizer or snack that’s quick to prepare, delicious, and sure to please a crowd. Made with spinach, sautéed onion and garlic, vegan feta, and wrapped in flaky vegan puff pastry, they bake to golden perfection and make an ideal finger food for any occasion.

  • Total Time: 30 minutes
  • Yield: 20 pinwheels

Ingredients

Main Ingredients

  • 9 oz frozen spinach
  • 1 teaspoon canola oil
  • 2 garlic cloves, minced
  • ½ large yellow onion, diced
  • ¼ teaspoon salt
  • 1 package vegan puff pastry dough
  • ⅓ cup vegan feta cheese, crumbled

Instructions

  1. Cook the Spinach: In a large pot, bring water to a boil and cook the frozen spinach until it is soft. Drain well and squeeze out any excess water to prevent sogginess in the pinwheels.
  2. Sauté Onion and Garlic: Heat canola oil in a pan over medium heat. Add the diced onion and minced garlic and sauté until translucent and golden, about 5-7 minutes. Add a splash of water if the ingredients start to brown too quickly to avoid burning.
  3. Mix Filling: Combine the drained spinach with the sautéed onion and garlic mixture. Season with ¼ teaspoon salt and let the filling cool completely to avoid melting the puff pastry prematurely.
  4. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the pinwheels.
  5. Roll and Fill Pastry: Roll out the vegan puff pastry on a flat surface. Spread the cooled spinach mixture evenly over the puff pastry, leaving the bottom quarter of the pastry empty. Sprinkle crumbled vegan feta cheese on top of the spinach filling.
  6. Form Pinwheels: Carefully roll the puff pastry from the filled side into a log shape, sealing the edge as you go. Once rolled, cut the log into approximately 1 cm thick slices, yielding about 20 pinwheels.
  7. Bake: Place the pinwheel slices on a baking tray lined with parchment paper. Bake in the preheated oven for 10-12 minutes, or until the pastry is golden and puffed.
  8. Serve: Allow pinwheels to cool slightly before serving. Enjoy these flavorful vegan treats warm or at room temperature.
