Instructions
- Prepare the marinade: In a large bowl, combine the extra virgin olive oil, coarse kosher salt, crushed red pepper flakes, dried oregano, and garlic powder. Stir well to mix the marinade ingredients thoroughly.
- Marinate the chicken: Add the chicken drumsticks to the marinade, tossing them until fully coated. Cover the bowl and refrigerate for 6 to 24 hours to allow the flavors to infuse deeply into the meat.
- Preheat and prepare baking setup: Remove the chicken from the refrigerator and pat each piece dry with paper towels. Preheat the oven to 400°F (204°C). Line a rimmed baking sheet with a wire cooling rack or use a broiler pan. Optionally, lay parchment paper underneath for easy cleanup. Placing chicken on a rack helps achieve even crispiness on all sides.
- Prepare the breading: In a shallow dish, mix the seasoned bread crumbs, freshly grated Parmesan cheese, and ground black pepper. This mixture will form the crispy coating for the chicken.
- Dredge the chicken: Press each piece of marinated, patted-dry chicken into the breadcrumb mixture, ensuring an even coating on all sides. Arrange the coated drumsticks carefully on the prepared rack-lined baking sheet.
- Bake the chicken: Place the baking sheet in the oven and bake the chicken for 35 to 40 minutes or until the internal temperature reaches 165°F (74°C). Since the drumsticks vary in size, check each piece for doneness.
- Rest and garnish: Remove the chicken from the oven and allow it to rest for a few minutes to retain its juices. Garnish with freshly minced parsley and serve hot for a crunchy, flavorful meal.

- For best results, marinate the chicken for at least 12 hours but no more than 24 hours to avoid overpowering acidity.
- Using a wire rack allows air circulation around the chicken, resulting in a crispier coating.
- If you want a spicier kick, increase the crushed red pepper flakes to 1 teaspoon.
