Hot Honey Ground Beef Bowls
- 1 lb ground beef
- 1 tbsp olive oil
- 1 yellow onion, diced
- 1 taco seasoning packet
- 1 cup cottage cheese
- 1 avocado, or more if desired
- 2 tbsp hot honey
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat oven: Set the oven to 400 degrees Fahrenheit to prepare for roasting the sweet potatoes.
- Season sweet potatoes: In a large mixing bowl, combine the cubed sweet potatoes with olive oil, garlic powder, paprika, cinnamon, salt, and black pepper. Toss until the potatoes are evenly coated with the seasoning mixture.
- Roast sweet potatoes: Spread the seasoned sweet potatoes on a large baking sheet in a single layer. Roast them in the oven for 45 to 60 minutes, stirring occasionally to ensure even cooking and browning.
- Prepare taco meat: When the sweet potatoes are near done, heat olive oil in a pan over medium-high heat. Add the diced yellow onion and season with salt and black pepper. Sauté the onions for 5 to 10 minutes until softened and translucent.
- Cook ground beef: Add the ground beef to the pan with onions. Brown the beef thoroughly, breaking it apart as it cooks. Once browned, stir in the taco seasoning according to the package instructions to evenly coat the meat.
- Assemble bowls: Divide the cooked taco-seasoned ground beef, roasted sweet potatoes, cottage cheese, and sliced or cubed avocado evenly into four bowls.
- Add hot honey: Drizzle 2 tablespoons of hot honey over each bowl, or adjust to taste for a perfect balance of sweetness and spice.
