Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease or spray a 9×9 inch or 11×7 inch baking pan with non-stick spray to prevent sticking.
- Make the flax eggs: In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water. Whisk together and set aside to thicken, creating your egg substitute.
- Mix dry ingredients: In a large mixing bowl, thoroughly combine the rolled oats, chopped nuts, cinnamon, nutmeg, baking powder, and salt.
- Mix wet ingredients: In a separate medium bowl, whisk together the unsweetened applesauce, non-dairy mylk, maple syrup, vanilla extract, and the prepared flax eggs until smooth.
- Combine wet and dry mixtures: Pour the wet ingredients into the dry ingredients and stir until everything is well combined, ensuring no dry patches remain.
- Fold in fruit: Gently fold in the blueberries or your chosen fruit. Transfer the mixture evenly into the prepared baking pan and optionally top with sliced banana or more fruit.
- Bake: Place the pan in the oven and bake at 350°F for 35 to 45 minutes. The center should appear almost set at around 35-40 minutes. For firmer oatmeal, bake until the center is fully set, about 45 minutes.
- Cool and serve: Allow the baked oatmeal to cool for about 5 minutes before serving. Enjoy it warm with yogurt, milk, or extra maple syrup if desired.
- Store leftovers: Cover any leftovers and refrigerate for up to one week or freeze for 2-3 weeks for longer storage.
