Ingredients

For the Biscuits:

  • 1 ½ cups shredded zucchini
  • 2 cups flour
  • 2 tbsp baking powder
  • 1 tsp garlic powder
  • ⅓ cup cold cubed butter
  • 1 cup milk
  • 1 egg
  • ⅓ cup diced green onion
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper to taste
  • Red pepper flakes to taste

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper. Squeeze excess moisture from shredded zucchini using a kitchen towel. Salt to encourage draining.
  2. In a bowl, combine flour, baking powder, salt, black pepper, red pepper flakes (if using), and garlic powder.
  3. Cut cold butter into dry ingredients until crumbs form.
  4. Mix in egg, milk, cheddar cheese, drained zucchini, and green onion.
  5. Drop spoonfuls of dough onto baking sheet, about 2 inches apart.
