This quick and easy 10-Minute Vegetable Fried Rice is a delicious and healthy dish that uses simple ingredients like leftover rice, frozen veggies, and eggs. Perfect for a speedy meal, it combines toasted sesame oil, garlic, and gluten-free soy sauce for a flavorful, satisfying stir-fry that’s great for lunch or dinner.

  • Total Time: 10 minutes
  • Yield: 4 servings

Ingredients

Base Ingredients

  • 1 tablespoon toasted sesame oil (or coconut oil)
  • 1 – 2 garlic cloves (minced)
  • 4 cups cooked/leftover rice, chilled (or quinoa/grain of choice)
  • 1 (16oz) bag organic frozen veggies (blend of carrots, corn, and peas recommended)
  • 2 large organic eggs

Seasoning

  • 2 – 3 tablespoons gluten-free soy sauce
  • ½ teaspoon ground ginger

Instructions

  1. Heat oil and garlic: Heat the toasted sesame oil and minced garlic in a large skillet or wok over medium-high heat, stirring continuously until fragrant, about 30 seconds. This step infuses the oil with garlic flavor to enhance the dish.
  2. Cook rice and veggies: Add the cooked rice and frozen vegetables to the skillet. Stir and cook for about 2 minutes until the vegetables start to soften and everything is evenly coated in the flavorful oil. Push the rice and veggie mixture to one side of the pan.
  3. Scramble eggs: Crack both eggs directly into the clear space in the skillet. Scramble them quickly with a fork until fully cooked, then mix the cooked eggs thoroughly into the rice and vegetable mixture to incorporate protein and richness.
  4. Add seasoning and finish cooking: Pour the gluten-free soy sauce over the pan mixture, sprinkle with ground ginger, and toss well to combine all ingredients. Continue cooking for another 1-2 minutes until the fried rice is hot and the flavors meld beautifully. Taste and adjust the seasoning if necessary.
  5. Serve: Remove from heat and serve the vegetable fried rice immediately for best taste and texture. Enjoy this nutritious, speedy meal that’s packed with flavor!

Notes

  • Use chilled leftover rice to prevent the fried rice from becoming mushy.
  • You can substitute frozen veggies with fresh vegetables such as bell peppers, broccoli, or snap peas.
  • For a vegan version, omit the eggs or replace with tofu scramble.
  • Adjust soy sauce quantity to control saltiness.
  • To boost flavor, garnish with chopped green onions or toasted sesame seeds if desired.
