  • 2 tablespoons lime juice (or to taste)

Instructions

  1. Sauté onions: Heat olive oil in a large skillet over medium-high heat. Add the diced Vidalia onion and sauté for 3-4 minutes until the onion begins to soften and become translucent.
  2. Cook chicken: Add the diced chicken breast to the skillet and cook for about 5 minutes, stirring and flipping frequently to ensure even cooking until the chicken is fully cooked and no longer pink inside.
  3. Add garlic and spices: Stir in minced garlic, sprinkle the cumin and Mexican oregano over the chicken and onions. Cook for about 1 minute until the mixture is fragrant, stirring nearly continuously to prevent burning.
  4. Combine salsa, rice, and beans: Pour in the salsa verde, then add the cooked rice and drained black beans. Stir well to combine all the ingredients evenly in the skillet.
  5. Finish with fresh flavors: Add lime juice and fresh cilantro to the skillet mixture. Season with optional salt and pepper to taste. Stir to combine and adjust seasoning if needed. Serve the dish hot immediately for best flavor.
