Dressing Ingredients
- 3 tbsp Extra Virgin Olive Oil
- 2 tbsp Red Wine Vinegar
- 1/2 tsp Dijon Mustard
- 1/8 tsp Fine Sea Salt
- Fresh Ground Black Pepper, to taste (heavy pinch)
Instructions
- Prepare the Salad: In a medium mixing bowl, combine the sliced cherry tomatoes, chunky cucumber pieces, and thinly sliced red onion. Sprinkle the chopped fresh herbs over the vegetables for added flavor and aroma.
- Make the Dressing: In a lidded jar or small mixing bowl, add the red wine vinegar, extra virgin olive oil, Dijon mustard, fine sea salt, and freshly ground black pepper. Shake vigorously or whisk well until the ingredients emulsify into a smooth dressing.
- Toss the Salad: Pour the prepared dressing over the salad mixture. Gently toss the ingredients together to ensure every piece is coated with the dressing. Taste the salad and adjust salt and pepper as desired for perfect seasoning.
- Garnish and Serve: Optionally sprinkle additional fresh herbs over the salad just before serving to enhance the freshness and presentation.
