Ingredients
Beef Mixture
- 1 1/2 pounds ground beef (or chicken)
- Black pepper, to taste
- 4 cloves garlic, chopped
- 1 tablespoon fresh grated ginger (or 1/4 cup candied ginger)
- 1-3 teaspoons Chinese 5 spice
- 1/3 cup tamari or soy sauce
- 1/4 cup Thai chili sauce (homemade recipe in notes)
- 2 tablespoons chopped green onions (plus 1/4 cup for topping)
Toppings and Wraps
- 4 Persian cucumbers, chopped
- 2 cups cilantro, chopped
- 1/2 cup Thai basil, chopped
- 1/3 cup chopped roasted peanuts
- 8-10 flour tortillas, warmed
- Chili paste, for serving
- Toasted sesame oil, for serving
Instructions
- Cook the beef mixture: In a large skillet over medium heat, add the ground beef and black pepper. Break up the meat as it cooks until browned, about 5 minutes. Add the chopped garlic, grated ginger, and Chinese five spice; cook for an additional minute until fragrant.
- Simmer with sauces: Pour in the tamari (or soy sauce) and sweet Thai chili sauce. Stir to combine and bring the mixture to a simmer. Cook for 3-5 minutes until the sauce thickly coats the beef. Stir in 2 tablespoons of chopped green onions, then remove from heat.
- Warm the tortillas: Place one tortilla at a time in the microwave for 15 seconds to make them pliable and easier to roll.
- Assemble the rolls: Spoon the warm beef mixture down the center of each tortilla. Top with chopped cucumber, cilantro, Thai basil, the remaining green onions, and roasted peanuts.
- Roll the tortillas: Fold the tortilla over the filling, then fold in the sides and ends tightly. Roll the tortilla forward to fully enclose the filling. Repeat for all tortillas.
- Serve: Serve the beef rolls warm with extra soy sauce, chili paste, and toasted sesame oil for dipping. For a complete meal, serve alongside steamed rice.
Notes
- For homemade Thai chili sauce, combine ingredients like red chilies, garlic, vinegar, sugar, and salt simmered until thickened.
- You can substitute ground chicken for beef for a lighter option.
- Adjust the amount of Chinese five spice according to your spice preference, starting with 1 teaspoon and increasing to 3 teaspoons for more flavor.
- To keep tortillas warm while assembling, wrap them in a clean kitchen towel.
- Adding a side of steamed jasmine rice makes this dish more filling for dinner.
