Calzone Dough
- 1 lb (454g) ground chicken
- 1 tsp dried Italian seasoning
- 1/3 cup (30g) grated Parmesan cheese, divided
Optional Seasonings for Dough
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
Fillings (suggested)
- Marinara sauce (for serving, optional)
- Your choice of keto-friendly fillings such as mozzarella cheese, pepperoni, sautéed vegetables, or cooked sausage
Instructions
- Mix Dough Ingredients: In a large bowl, combine the ground chicken, dried Italian seasoning, and optional seasonings (onion powder, garlic powder, salt) if using. Mix thoroughly until evenly combined.
- Shape Dough Circles: Divide the mixture into two equal portions. Place one portion between two pieces of parchment paper and use a rolling pin to flatten it into a 9-inch circle about 1/4-inch thick. Repeat for the second portion.
- Add Fillings: Remove the top parchment from each dough circle. Place your desired fillings on one half of each circle, leaving a small border around the edges to allow sealing.
- Form Calzones: Fold the dough over the fillings to create a half-moon shape. Use lightly wet or oiled hands to press and seal the edges tightly, fully enclosing the filling.
- Top with Parmesan: Sprinkle the grated Parmesan evenly over the tops of both calzones, dividing it between them.
- Cook in Air Fryer: Line the air fryer basket with parchment paper. Place one calzone at a time in the basket. Preheat the air fryer to 375°F (190°C). Cook each calzone for approximately 15 minutes until the chicken is cooked through and the Parmesan topping is golden and crisp. For a crispier bottom, flip the calzone and air fry an additional 3–4 minutes. Repeat for the second calzone.
- Cook in Oven: Line a baking pan with parchment paper and place the calzones on it. Preheat the oven to 425°F (218°C). Bake the calzones for about 20 minutes until the chicken is fully cooked and the Parmesan is golden and crisp. Flip the calzones, then set the oven to low broil and broil for a few minutes until the bottoms crisp up nicely.
- Rest and Serve: Let calzones rest for a few minutes before serving. Optionally serve with marinara sauce. Store leftovers in an airtight container in the fridge or freezer.
