Instructions

- Combine Wet Ingredients: To the dry mixture, add the eggs, Greek yogurt, vanilla extract, avocado oil, and maple syrup or honey. Stir thoroughly until all ingredients are well incorporated.
- Add Apples: Gently fold in the diced apples, ensuring they are evenly spread throughout the mixture.
- Bake: Pour the oatmeal mixture into the prepared baking dish. Bake for 35 to 40 minutes, or until the top is golden and set. An internal temperature of 200℉ (93℃) signals it is cooked through without overbaking.
- Cool and Serve: Allow the baked oatmeal to cool in the pan for about 15 minutes before slicing. Serve warm with a dollop of extra Greek yogurt, a splash of milk, or a drizzle of peanut butter if desired.
- Storage: Once completely cooled, store leftovers in an airtight container in the refrigerator for up to 4 days.
