Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • 2 cups rolled oats

  • ½ cup chopped walnuts

Wet Ingredients

  • ½ cup butter (softened)
  • ¾ cup packed brown sugar

  • 1 apple (peeled, cored and shredded)

Glaze

  • ¼ cup powdered sugar
  • ½ tablespoon water (or milk)

Instructions

  1. Prep. Preheat your oven to 375ºF (190ºC). Lightly grease a cookie sheet with cooking spray or line it with parchment paper, then set it aside for later.
  2. Mix the wet ingredients. In a mixing bowl or stand mixer bowl, cream together the softened butter and packed brown sugar until the mixture becomes light and fluffy. Next, beat in the eggs one at a time, followed by the vanilla extract until fully combined.
  3. Add the dry ingredients. Using a wooden spoon, gradually stir in the flour, baking soda, rolled oats, ground cinnamon, ground nutmeg, salt, shredded apple, and chopped walnuts. Mix just until all ingredients are evenly combined, being careful not to overmix.
  4. Bake. Drop rounded tablespoonfuls of cookie dough about 2 inches apart onto the prepared cookie sheet. Bake in the preheated oven for 10 to 12 minutes until the cookies are set and lightly golden around the edges. Remove the cookies from the oven and transfer them to a wire rack to cool completely.
  5. Make the glaze. Meanwhile, in a small bowl, whisk together the powdered sugar and water (or milk) until a smooth glaze forms. Once the cookies are cooled, drizzle the glaze evenly over the tops of the cookies to finish.
