Ingredients

Oatmeal Cookies

  • 1 3/4 cup All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 tsp Ground cinnamon
  • 1/2 tsp Pumpkin pie spice
  • 3 cups Old fashioned oats
  • 1 cup Unsalted butter (room temperature)
  • 1 cup Light brown sugar (packed)
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1/2 TBSP Unsulfured molasses (not blackstrap)
  • 2 Large eggs (room temperature)

Apple Pie Filling

  • 3 Gala apples (peeled)
  • 2 TBSP Unsalted butter
  • 1/2 cup Light brown sugar (packed)
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 2 TBSP Water
  • 1 tsp Cornstarch

Marshmallow Creme Frosting

  • 1 cup Unsalted butter (room temperature)
  • 7 oz Marshmallow creme
  • 1 cup Powdered sugar (sifted)
  • 1 tsp Pure vanilla extract
  • Pinch of salt

Instructions

  1. Mix dry ingredients: In a medium bowl, sift the flour and add the baking soda, salt, cinnamon, pumpkin pie spice, and oats. Stir to combine and set aside.
  2. Beat butter and sugars: Using a mixer in a large bowl, beat the unsalted butter, light brown sugar, and white granulated sugar on high speed for 2 minutes until pale and fluffy.
  3. Add wet ingredients: Mix in vanilla extract, molasses, and eggs on medium speed until fully incorporated.
  4. Combine dry and wet: Add the flour and oat mixture to the wet ingredients and mix on low speed until just combined to avoid overmixing.
  5. Chill dough: Cover the bowl with dough and refrigerate for 45 minutes to allow oats to absorb moisture and dough to firm up.
  6. Preheat oven and prepare pans: Heat oven to 350℉ (175℃) and line two cookie sheets with parchment paper.
  7. Scoop dough: Using a 1 1/2 tablespoon cookie scoop, portion 12 dough balls per cookie sheet, spacing evenly.
  8. Bake cookies: Bake one tray at a time for 9-11 minutes or until edges are lightly golden.
  9. Cool cookies: Let cookies cool on the hot sheet pan for 5 minutes, then transfer to a wire rack to cool completely before decorating.
  10. Prepare apple filling: While dough chills, peel and dice apples into small pieces.
  11. Cook filling: In a large sauté pan over medium heat, melt butter, then add diced apples, brown sugar, cinnamon, nutmeg, water, and cornstarch. Stir with a rubber spatula.
  12. Simmer filling: Cook for 5–10 minutes until apples are soft and mixture thickens.
  13. Cool filling: Transfer to a bowl and allow to cool to room temperature.
  14. Sift powdered sugar: In a medium bowl, sift powdered sugar to remove lumps.
  15. Make frosting base: Beat room temperature butter on high speed for 2 minutes until fluffy. Add marshmallow creme and continue mixing on high speed for 1 minute. Scrape down sides.
  16. Combine frosting: Add sifted powdered sugar, vanilla extract, and a pinch of salt. Mix on low speed until incorporated, then beat on high speed until smooth and creamy.
  17. Assemble cream pies: Pair cookies by size. Pipe a border of frosting along the edge of one cookie, leaving the center open, fill the middle with apple pie filling, then top with the matched cookie.
  18. Set frosting: Place assembled cream pies in the freezer for 15 minutes to set frosting.
  19. Store: Keep the cream pies refrigerated to maintain firmness; chilling prevents frosting from squishing out when bitten.

Notes

  • Make sure the butter and eggs are at room temperature for best mixing results.
  • Chilling the dough is crucial for texture and to prevent spreading while baking.
  • You can substitute Gala apples with a tart variety like Granny Smith for a tarter filling.
  • Use parchment paper or silicone mats to prevent sticking and ensure even baking.
  • For easier piping, fit your piping bag with a large French star tip to create decorative frosting borders.
  • Store finished cream pies in the refrigerator and consume within 3-4 days for freshness.
