Pizza Dough
- 1 easy pizza dough (or your favorite dough)
Asparagus Topping
- ½ lb (220 grams) asparagus, tough ends trimmed
- extra virgin olive oil, for cooking and drizzling
- salt and black pepper, to taste
Cheeses
- 1 (125 gr / 4.5 oz) mozzarella ball packed in water (or shredded low moisture mozzarella)*
- 3 tablespoons grated Parmesan cheese
- ½ cup (110 grams / 4 oz) soft cream cheese (use more if desired)
Garnish
- ⅓ cup fresh basil leaves
Instructions
- Prepare the pizza dough: Follow your easy no-knead pizza dough recipe up to step 5, which includes shaping the dough and preheating the oven. This will ensure the dough is ready for topping and baking.
- Cook the asparagus: Rinse the asparagus and pat dry. Remove the woody ends by snapping them off or slicing where the color changes from white to green. Cut the asparagus lengthwise and crosswise. Heat olive oil in a skillet over medium heat, then add the asparagus. Season with salt and black pepper and sauté for 8-10 minutes until tender but still vibrant. Set aside.
- Shape the dough: Once the dough is ready, place a sheet of parchment paper on a pizza peel or the back of a rimmed baking sheet. Transfer the dough onto the parchment and gently press it out from the center with your fingers to form approximately a 9×13 inch pizza. Avoid flattening too much to keep the dough airy and fluffy.
- Add the cheeses: If using fresh mozzarella in water, dice it and place it between kitchen paper towels to absorb excess moisture. Spread the mozzarella evenly over the dough, followed by grated Parmesan. Using a spoon, drop small dollops of cream cheese all over the pizza surface.
- Top with asparagus: Arrange the sautéed asparagus evenly over the cheeses. Sprinkle lightly with salt and black pepper (no more than ¼ teaspoon salt).
- Bake the pizza: Using the pizza peel, carefully transfer the pizza on the parchment paper onto a preheated pizza stone in the oven. Bake until the mozzarella is bubbling and the crust is golden and browned, about 12-15 minutes (in fan ovens, 8-10 minutes). Keep a close eye as oven temperatures vary.
- Serve: Let the pizza cool for 1-2 minutes after baking. Drizzle with high-quality extra virgin olive oil and scatter fresh basil leaves on top. Add extra black pepper if desired. Slice and serve immediately to enjoy warm.

- Using fresh mozzarella requires drying to prevent soggy pizza.
- The asparagus can be sautéed ahead of time and refrigerated before assembling the pizza.
