A refreshing and flavorful Avocado Salad combining creamy avocados, briny olives, juicy grape tomatoes, tangy capers, and salty feta cheese, dressed with a zesty lime or lemon vinaigrette and served with pita bread wedges for a light, healthy, and satisfying meal or side dish.

  • Total Time: 10 minutes
  • Yield: 6 servings

Ingredients

Salad Ingredients

  • 5 ounces pitted olives, drained and sliced into thin rounds
  • 4 avocados, pitted and diced
  • 1 pint grape tomatoes, halved
  • 2 tablespoons capers
  • 2 cups cubed feta cheese

Dressing Ingredients

  • 2 whole limes or lemons, juiced
  • 2 to 3 tablespoons extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste

Serving

  • Pita bread wedges

Instructions

  1. Combine the ingredients. In a large salad bowl, add the sliced olives, diced avocados, halved grape tomatoes, capers, and cubed feta cheese. Mix gently to combine without mashing the avocado.
  2. Make the dressing. In a small mixing bowl, whisk together the juice of two limes or lemons, extra virgin olive oil, Italian seasoning, salt, and freshly ground black pepper until the dressing is well combined. Taste and adjust the seasoning as needed.
  3. Toss the salad. Pour the prepared dressing over the salad ingredients and gently toss to coat everything evenly, being careful to keep the avocado pieces intact.
  4. Serve and enjoy. Transfer the salad to a serving bowl or plates and serve immediately with fresh pita bread wedges on the side for scooping and enjoying alongside the salad.

Notes

  • Use ripe but firm avocados to avoid overly mushy texture in the salad.
  • Adjust the amount of olive oil in the dressing based on your preference for richness and consistency.
  • This salad is best eaten fresh to maintain the vibrant flavors and avoid browning of avocado.
  • For a bit of extra crunch, consider adding chopped cucumber or red onion.
  • Keep the salad refrigerated if not serving immediately but add dressing just before serving to keep the avocado fresh.
