Instructions
- Preheat and Prepare Pan: Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin pan to prevent sticking.
- Mix Wet Ingredients: In a large bowl, whisk together 1 cup Greek yogurt, ½ cup unsweetened apple sauce, ¼ cup honey or maple syrup, 1 large egg, and 1 teaspoon vanilla extract until smooth and well combined.
- Add Dry Ingredients and Apples: Stir in 1½ cups rolled oats, 1½ teaspoons cinnamon, 1 teaspoon baking powder, and ¼ teaspoon salt until the oats are fully coated. Then fold in the chopped apples and optional ½ cup raisins evenly into the mixture.
- Fill Muffin Pan: Divide the oatmeal mixture evenly among the 12 muffin cups, filling each to the top. Gently press the mixture down with the back of a spoon to compact the cups slightly.
- Bake and Cool: Bake in the preheated oven for 23 to 25 minutes until the tops are lightly golden and the centers feel set. Let the cups cool in the pan for 20 minutes to firm up. Run a small knife around the edges before gently lifting them out of the pan.
Notes
- You can substitute honey with maple syrup for a vegan-friendly option, but the recipe is not fully vegan because of the egg and Greek yogurt.
- The apples add natural sweetness and moisture; using tart apples like Granny Smith can provide a nice balance.
- Feel free to omit the raisins or substitute them with other dried fruits or nuts.
