Instructions

  1. Preheat and prepare filling: Pre-heat your oven to 375 degrees Fahrenheit. In a bowl, combine the softened vegan butter, chopped walnuts, brown sugar, fresh sage, orange zest, and a tiny pinch of sea salt. Mash them together thoroughly with a fork or wooden spoon until the mixture is cohesive.
  2. Core the apples: Wash the apples well. Slice off the tops where the stems are and set aside. Using a grapefruit spoon or a regular spoon and paring knife, carefully scoop out the core and seeds from each apple creating a cavity without piercing through the bottom, ensuring there is ample space to hold the filling.
  3. Fill and arrange apples: Place the cored apples upright into an 8×8 inch baking dish with higher sides to prevent tipping. Divide the walnut filling evenly among the apples, packing it down firmly into each cavity. Replace each apple’s top back onto it. Pour the water or apple cider into the baking dish around the apples to keep them moist during baking.
  4. Bake the apples: Bake the apples in the preheated oven for 35-40 minutes, or until they are tender when pierced with a fork or skewer and the filling is bubbly and caramelized.
