- 9 fajita-size tortillas, cut in half

Instructions
- Brown the Beef: In a large skillet, cook the ground beef and diced onions over medium heat until the beef is browned and the onions are tender. Drain off any excess fat. Then stir in the taco seasoning, black beans, and frozen corn, mixing well to combine all the ingredients.
- Preheat Oven and Prepare Dish: Heat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking oil. Pour ½ cup of the enchilada sauce into the bottom of the baking dish and spread it evenly to prevent sticking and add flavor.
- Assemble the Casserole: Arrange 3 tortilla halves on the bottom of the dish as the first layer. Spread half of the meat mixture on top of the tortillas, followed by about ½ cup of shredded cheese and ½ cup of enchilada sauce. Then place 3 more tortilla halves over this layer. Repeat with the remaining meat mixture, cheese, and enchilada sauce, ending with a final layer of 3 tortilla halves, the remaining enchilada sauce, and the rest of the shredded cheese.
- Bake Covered: Cover the casserole dish with foil and bake in the preheated oven for 25 minutes to allow the flavors to meld and the ingredients to heat through thoroughly.
- Finish Baking Uncovered: Remove the foil carefully and bake for an additional 5 minutes until the cheese on top is fully melted and starts to brown slightly, creating a delicious crust.
- Rest and Garnish: Let the casserole sit for 5-10 minutes after baking to firm up, making it easier to slice. Garnish with the diced tomatoes, chopped cilantro, and a dollop of sour cream if desired before serving.
