Perfect for a hearty family dinner or special occasion, this recipe combines rich flavors and satisfying textures in one delicious dish.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Beef Filling

  • -2 lbs beef (sirloin or tenderloin, cut into small bite-size pieces)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 small yellow onion (finely diced)
  • 3 cloves garlic (minced)
  • 16 oz. mushrooms (finely chopped)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 2 tbsp flour
  • ½ cup beef broth
  • ½ cup heavy cream
  • 1 tbsp Dijon mustard

Assembly

  • 1 sheet puff pastry (thawed)
  • 1 egg (for egg wash)
  • Flaky salt (for sprinkling)

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish to prevent sticking and set aside.
  2. Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Add the chopped beef in a single layer and sear for about 2–3 minutes per side until browned. Remove the beef from the skillet and set aside.
  3. Sauté Aromatics: In the same skillet, add butter, finely diced onion, and minced garlic. Cook for 3–4 minutes until the onion is softened and translucent.
  4. Cook Mushrooms: Add the finely chopped mushrooms along with salt, black pepper, and fresh thyme. Cook for 8–10 minutes until the mushrooms release their moisture and it evaporates, resulting in a dry mixture.
  5. Thicken the Sauce: Sprinkle the flour over the mushroom mixture and stir for 1 minute to cook off the raw flavor. Gradually pour in the beef broth and heavy cream while stirring continuously until the sauce thickens.
  6. Add Flavor and Combine Beef: Stir in the Dijon mustard, then return the seared beef pieces to the skillet. Mix until all the meat is coated in the thick creamy sauce.
  7. Fill the Baking Dish: Pour the beef and mushroom filling evenly into the prepared 9×13 baking dish.
  8. Prepare Puff Pastry: Roll out the thawed puff pastry slightly if needed to cover the dish. Lay it over the filling and gently press the edges to seal against the sides of the dish. Cut small slits on top to allow steam to escape.
  9. Egg Wash and Season: Whisk the egg and brush it over the surface of the puff pastry. Sprinkle lightly with flaky salt for added texture and flavor.
  10. Bake: Bake in the preheated oven for 25–35 minutes until the pastry is golden brown and the filling is bubbling at the edges. If the pastry darkens too quickly, loosely cover it with foil to prevent burning.
  11. Rest and Serve: Allow the pot pie to rest for 10–15 minutes before serving to let the filling set. Serve scooped into bowls and garnish with fresh thyme or cracked black pepper if desired.

Notes

  • Use sirloin or tenderloin for tender beef pieces that cook quickly and stay juicy.
  • Ensure the mushroom mixture is dry before adding flour to prevent a soggy filling.
  • Thaw puff pastry completely before use; this will make rolling and handling easier.
  • Resting the pot pie after baking helps prevent burning your mouth on hot filling and improves texture.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven to maintain crisp pastry.
