This Berry Icebox Cake is a delightful no-bake dessert featuring layers of creamy whipped cream, soft cream cheese, fresh strawberries, blueberries, and crispy graham crackers. Chilled for several hours, the cake melds all the flavors and textures into a refreshing, easy-to-make treat perfect for warm days or celebrations.

  • Total Time: 6 hours 20 minutes
  • Yield: 12 servings

Ingredients

Cream Mixture

  • 1 8-ounce block cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 2 cups heavy whipping cream
  • 1 teaspoon pure vanilla extract

Layers

  • 18 graham cracker sheets (2 whole sleeves)
  • 1 pound strawberries, sliced
  • 1 cup blueberries

Garnish

  • Extra strawberries, blueberries, and fresh mint for topping

Instructions

  1. Make the Whipped Cream Mixture: In a large bowl, beat the softened cream cheese and confectioners’ sugar with a hand or stand mixer until smooth and creamy. Add the heavy whipping cream and vanilla extract, then beat on medium-high speed until stiff peaks form, creating a fluffy and stable whipped cream mixture.
  2. Layer 1: Spread a thin layer (about 1 to 2 tablespoons) of the whipped cream mixture evenly in the bottom of an 8×8-inch baking dish. Arrange a layer of graham crackers over the cream, breaking them as needed to fit evenly. Spread one-third of the whipped cream mixture over the crackers, then top with half of the sliced strawberries and half of the blueberries.
  3. Layer 2: Add a second even layer of graham crackers on top of the fruit. Spread another one-third of the whipped cream mixture over this layer. Top this with the remaining sliced strawberries and blueberries.
  4. Layer 3: Add a final layer of graham crackers, and spread the remaining whipped cream mixture evenly on top, smoothing it out to form an even surface.
  5. Chill: Cover the dish with plastic wrap and refrigerate for at least 6 hours or preferably overnight. This chilling time allows the graham crackers to soften and the flavors to meld, setting the cake properly.
  6. Garnish and Serve: Just before serving, top the cake with extra strawberries, blueberries, and fresh mint leaves for decoration. Cut into squares and serve chilled for a refreshing dessert.

Notes

  • Use full-fat cream cheese and heavy whipping cream for the best texture and flavor.
  • For a gluten-free option, substitute graham crackers with gluten-free crackers or cookies.
  • The cake improves in flavor and texture after chilling overnight.
  • Ensure cream cheese is softened beforehand for smooth mixing.
  • Fresh berries can be swapped or supplemented with raspberries or blackberries as desired.
