Ingredients
Cream Mixture
- 1 8-ounce block cream cheese, softened
- 1/2 cup confectioners’ sugar
- 2 cups heavy whipping cream
- 1 teaspoon pure vanilla extract
Layers
- 18 graham cracker sheets (2 whole sleeves)
- 1 pound strawberries, sliced
- 1 cup blueberries
Garnish
- Extra strawberries, blueberries, and fresh mint for topping
Instructions
- Make the Whipped Cream Mixture: In a large bowl, beat the softened cream cheese and confectioners’ sugar with a hand or stand mixer until smooth and creamy. Add the heavy whipping cream and vanilla extract, then beat on medium-high speed until stiff peaks form, creating a fluffy and stable whipped cream mixture.
- Layer 1: Spread a thin layer (about 1 to 2 tablespoons) of the whipped cream mixture evenly in the bottom of an 8×8-inch baking dish. Arrange a layer of graham crackers over the cream, breaking them as needed to fit evenly. Spread one-third of the whipped cream mixture over the crackers, then top with half of the sliced strawberries and half of the blueberries.
- Layer 2: Add a second even layer of graham crackers on top of the fruit. Spread another one-third of the whipped cream mixture over this layer. Top this with the remaining sliced strawberries and blueberries.
- Layer 3: Add a final layer of graham crackers, and spread the remaining whipped cream mixture evenly on top, smoothing it out to form an even surface.
- Chill: Cover the dish with plastic wrap and refrigerate for at least 6 hours or preferably overnight. This chilling time allows the graham crackers to soften and the flavors to meld, setting the cake properly.
- Garnish and Serve: Just before serving, top the cake with extra strawberries, blueberries, and fresh mint leaves for decoration. Cut into squares and serve chilled for a refreshing dessert.

- For a gluten-free option, substitute graham crackers with gluten-free crackers or cookies.
- The cake improves in flavor and texture after chilling overnight.
- Ensure cream cheese is softened beforehand for smooth mixing.
