  • 2 tablespoons crunchy peanut butter
  • 1 tablespoon pure maple syrup
  • 1 tablespoon chia seeds
  • 1 tablespoon golden flax seeds
  • 1/2 teaspoon cinnamon

Toppings

  • A dollop of berry chia jam
  • Toasted coconut flakes
  • Roasted & unsalted peanuts, chopped

Instructions

  1. Prepare Jam: Make a batch of berry chia jam using the Instant Pot Blackberry Chia Jam recipe, which will be used to layer and top the oats.
  2. Mix Oats: In a medium bowl with a lid, combine the rolled oats, Greek yogurt, oat milk, crunchy peanut butter, pure maple syrup, chia seeds, golden flax seeds, and cinnamon. Stir well until all ingredients are fully incorporated.
  3. Refrigerate: Seal the bowl with a lid and refrigerate overnight or for at least 2-3 hours to allow the oats and seeds to soak and thicken, creating a creamy texture.
  4. Stir: Remove the soaked oats from the refrigerator and give it a final stir to evenly distribute the ingredients before assembling.
  5. Assemble Jars: Using three small jars (about 8 oz or 240 ml each), spoon approximately ½ cup of the soaked oats into the bottom of each jar. Add 2 tablespoons of the prepared berry chia jam on top, then add another ¼ cup of the overnight oats to finish the layers.
