Jam
- 1 batch of blackberry or raspberry chia jam (prepared following Instant Pot Blackberry Chia Jam recipe)
Overnight Oats
- 1 cup gluten-free old fashioned rolled oats
- 1/2 cup Greek yogurt (or substitute with any preferred yogurt)
- 1 cup unsweetened plain oat milk (or substitute with other dairy-free or regular milk)
- 2 tablespoons crunchy peanut butter
- 1 tablespoon pure maple syrup
- 1 tablespoon chia seeds
- 1 tablespoon golden flax seeds
- 1/2 teaspoon cinnamon
Toppings
- A dollop of berry chia jam
- Toasted coconut flakes
- Roasted & unsalted peanuts, chopped
- Peanut butter (for drizzling on top, optional)
Instructions
- Prepare Jam: Make a batch of berry chia jam using the Instant Pot Blackberry Chia Jam recipe, which will be used to layer and top the oats.
- Mix Oats: In a medium bowl with a lid, combine the rolled oats, Greek yogurt, oat milk, crunchy peanut butter, pure maple syrup, chia seeds, golden flax seeds, and cinnamon. Stir well until all ingredients are fully incorporated.
- Refrigerate: Seal the bowl with a lid and refrigerate overnight or for at least 2-3 hours to allow the oats and seeds to soak and thicken, creating a creamy texture.
- Stir: Remove the soaked oats from the refrigerator and give it a final stir to evenly distribute the ingredients before assembling.
- Assemble Jars: Using three small jars (about 8 oz or 240 ml each), spoon approximately ½ cup of the soaked oats into the bottom of each jar. Add 2 tablespoons of the prepared berry chia jam on top, then add another ¼ cup of the overnight oats to finish the layers.
- Store: Seal the jars and keep them refrigerated until ready to eat. They can be stored for up to 3-4 days for convenient grab-and-go breakfasts.
- Add Toppings & Enjoy: When you’re ready to eat, top each jar with an additional dollop of berry chia jam, toasted coconut flakes, chopped roasted peanuts, and a drizzle of peanut butter if desired, then enjoy the rich, nutty, and fruity flavors.
Notes
- The recipe uses gluten-free rolled oats, but regular oats can be substituted if gluten is not a concern.
- The yogurt can be swapped for any variety including dairy-free to accommodate dietary preferences.
- The berry chia jam can be prepared in advance and kept refrigerated for quick layering.
- Overnight oats can be made up to 4 days in advance and stored properly to maintain freshness.
- Optional toppings like toasted coconut flakes and nuts add extra texture and flavor but can be omitted based on preference or allergies.
